Dear Listmates,

Here is a gluten-free adaptation of a tropical themed spice cake from
Coastal Living magazine. This is an unfrosted cake that uses a hot glaze
that soaks into the cake through holes that you poke. Even though the cake
is (somewhat) fat-reduced, it is not dry due to the glaze. It keeps well in
the fridge, and a quick march through the microwave restores it to a
freshly-baked consistency. You can take a peek at it here:

recipe on the website, but it is also listed under the cakes section. This
fact is handy to know because we periodically change the picture on our
website.

Don't like rum or spirits of any type - no problem. This versatile cake can
be made with a number of different glazes, including non-alcoholic ones. The
recipe suggests a few, but let your imagination loose.
