I was recently told that a CA/AZ pasta chain called Pasta Pomodoro
www.pastapomodoro.com <http://www.pastapomodoro.com/>   has gluten-free
pasta on their menu.  We stopped in on the fly for lunch one afternoon.  The
staff was basically clueless.  We did end up eating there; my daughter had
GF pasta with Pomodoro Sauce (tomato, basil, garlic, olive oil) and some
grilled chicken.  I e-mailed the restaurant HQ when I returned home,
praising them for having GF pasta but asking if they could train their
kitchen and wait-staff like Outback and PF Chang's do.  I received a very
detailed ingredient list of all menu items, in which there are many GF
possibilities including salads, soups and even a dessert.  I just worry the
staff is not educated enough to ease my fears.  Two other strange things,
the person from HQ who replied to my e-mail stated that their GF pasta is
not cooked in fresh water unless you specifically ask.  The restaurant calls
their GF pasta "Low-gluten High-protein" maybe it's because they don't use
fresh water for cooking.  It is GF though; the restaurant gets it from
www.adriennes.com/pasta.htm .  Anyone have ideas on how we can positively
encourage them to train the staff and publish a small GF menu?
