Celiac List Folks,

I have read for weeks now without noticing a mention of an
alternative to wheat that is available here in Austin, Texas.

Is  SPELT  acceptable to gluten-intolerant people?

It can be used similarly to flour in all manner of "wheat-like" cooking,
but I wonder if it is safe for celiacs?
