&#65279;Hello everyone!! Thanks for your responses about Fake Crab in
Canada...there seems to be one hopeful kind out there...now to
find it :) Sorry for the delay in summarizing...I had my appendix
out so I wasn’t doing too much!! Have a great day! Here is the
summary:

We have found fake crab meat at Superstore. It is made by Sea
Quest and is called Atlantic Lobster (flavoured Alaska Pollack).
The product person from our Edmonton Chapter phoned the company
and they will not guarantee that it is gluten-free as they make
other things which do contain gluten. We have eaten it with
absolutely no problems.  (The Superstore is a chain that sells
President Choice products...so it might be in other stores that
sell President Choice!?)

I found a brand called Leg-a-Sea. I bought is at a Piggly Wiggly
Store. I don't know if you can find it in Canada but it is gluten
free and tastes good.

I make sushi, and love it! But I don't use fake crab. What works
for me is either tuna (canned tuna works great), or lox or smoked
salmon. There are a lot of good sushi recipes around. One of my
favorite ingredients is "gourd strips" -- they are dried pieces
of gourd, and you soak them in soy sauce + sugar until they
rehydrate. It doesn't sound like much, but it tastes great. Also
you can whip up some eggs with soy+sugar (or molasses, if you
don't eat soy, which I don't), and make a thin omlette/pancake,
and cut it into strips. You can also use real crab or any real
fish. The fake crab mainly adds a "sweet" taste, which you can
get with the gourd or egg strips just as easily. My family's
favorite sushi though, is just canned tuna plus dill pickles
strips. Easy!

Then the discussion turned into a sushi one!!! There were
questions about the kind of seaweed to use, the kind of vinegar,
etc. I live in “Chinatown” so it’s very easy to get the seaweed
wrappers. The ingredients on the wrappers say SEAWEED. I have had
no problem with them. For the vinegar, I just use normal vinegar,
I don’t use special sushi vinegar, etc. And for the rice, I use
‘normal’ rice too. I think I’m using long grain these days. I
tried making sushi with basmati rice but that didn’t work too
well. Enjoy sushi making! It is possible to eat sushi!!!
