I went to a gastro MD about my CD (have been diagnosed for a year but
haven't been to a specialist). He told me something that was very
interesting but that contradicts what I have read on this list. He said
that our villi are constantly rejuvenating themselves and are completely
repared in about 7 days of GF diet. The implications of this are
obvious: that I could "cheat" once in a while without permanent damage.
Any response to this? I am skeptical but hopeful. There are some foods
with trace amounts of gluten which give me mild symptoms. It would be
nice to eat these once in a while if I knew no long-term damage was
being done.
