Oatmeal Cookies
Adapted from King Arthur Flour Company
These have a wonderful taste. Most importantly, it's such a treat to cook
with oats again! -Beth Hillson
1 stick unsalted butter or margarine, softened
2 Tbs. vegetable oil
1 cup brown sugar, firmly packed
1 egg, lightly beaten
1/4 cup milk
1 tsp. vanilla
1 cup currants or chopped raisins
1/2 cup chopped walnuts or pecans
2 cups Cream Hill Estates Lara's Gluten-Free Rolled Oats (#956042 or
#956043)
1 1/2 cups Pamela's All-purpose Baking and Pancake Mix (#956039 or #956040)
1/2 tsp ground cinnamon
Preheat oven to 350 degrees.
In a large bowl, cream together the butter, oil and sugar. Add the egg and
beat until fluffy. Add the milk and vanilla and beat to combine. Stir in
currants, nuts and oats.
In a separate bowl, combine the baking mix and cinnamon. Add to oat
mixture, a little at a time beating well after each addition. Let mixture
rest for 20 minutes.
Lightly grease two cookie sheets or line with parchment paper. Use a
teaspoon or a small scoop to drop batter onto sheets, leaving 1 inch between
cookies. Bake 12-14 minutes or until edges are light brown. Remove and
cool before storing.
Makes 42-48 cookies.
