In reality, Celiac has made me think about what I eat.  It has made
me eat cleaner (without additives}. This is one phrase in this interesting
letter. It caught my eye because this is something few people mention. My
rash started in the late 60s. Years later I did a fasting, and found that the
first ten times my rash broke out, was after sodium nitrate and other
additives. Is this something all Celiac should watch out for? Of course I
have. I was almost relieved when my allergy test came back with reaction to
gluten, and potatoes, 30 years later. This people can accept, not about the
additives.
