     The sulfite in wine bothers my major joints so I'm testing the wine
before I sample.
       Can someone tell me if the sulfite level decreases after a bottle is
opened. When I first opened a local wine the sulfite level did bother me.
After about 2 months I tried it again and it was OK.
     I have a test kit from CHEMETRICS ,    that same wine tested 12 ppm now
after being open for a while.
      Can someone with more experience tell me what level to look for in a
first opened bottle, and if the level actually decreased or if something else
 happened. The people at the winery have been very helpful with this problem
and they are sure their wine is very low sulfite.
       The 10 titrets kit is catalog # K-9610W and the telephone # is
800-488-7492. The kit is about $10.00  for 10 titration cells.
     If anyone has more information about sulfite's please pass it on.
