I was delighted to see the mainstream magazine, Cooking For Two, devote a page
in their summer edition to "Going Gluten-Free." Half the page contains
information on the diet; the other half has a recipe for Grilled Shrimp
Lettuce Wraps. Since the recipe calls for soy sauce, I would like to have
seen them mention that some soy sauce contains wheat.

The article begins, "If you follow a special health-related diet, you know
what a chore it can be to rethink your entire way of eating. For someone with
celiac disease (celiac sprue), the task can be daunting." The article should
help raise awareness. - Shirley Holt (Alabama)
