For the last 17 years - Gifts of Nature - has been manufacturing and 
marketing its assortment of great tasting, complete baking mixes. For the majority of 
this time sales were generated via the Gifts of Nature web site 
www.giftsofnature.net and attendance at a number of gluten intolerant support group meetings 
and national conferences across the country. Now along comes a product that 
has been desired for some time. For years oats have been a question mark in the 
Gluten Intolerant diet. Scientists have tested oats over and over finding 
that oats do not have what is generally considered harmful gluten. Regretfully 
there is a very small segment of the gluten intolerant community that does have 
a problem with any oats. Tests have shown commodity oats do have a very high 
risk of cross contamination. The contamination is from wheat, barley and rye 
starting with fields that may have residual contaminating plants that are there 
because of remnant grain in the field from a previous year or unclean seeding 
equipment that was used to plant this years oat crop. The next opportunities 
for cross contamination are in the harvesting and transportation equipment. 
Gifts of Nature is aligned with a small grower cooperative that is operated under 
a Gluten-Free production protocol. This protocol starts with field 
preparation, seeding and harvesting with clean, dedicated equipment as well as 
transportation in dedicated grain tote bags. When the harvest is complete each lot of 
oats is Elisa tested and then rolled in a cold roll process. This method does 
not require steam or the drying and thereby retaining all the natural oat 
flavor and nutrition. The rolled oats are then bagged in 50 pound bags and shipped 
to Gifts of Nature's dedicated gluten-free facility where they are again 
tested for gluten content before being placed in the retail package and shipped to 
our ever increasing, number of customers and retailers across the country. The 
extensive amount of gluten testing that is applied to all Gifts of Nature 
products is a result of Gifts of Nature's mission to provide the safest and best 
tasting products to the Gluten-Free market. The requirements of the 
Gluten-Free Certification Organization, (GFCO) adds an additional level of testing and 
monitoring on all Gifts of Nature products including the oats. Gifts of Nature 
is the second company in the country to participate in the GFCO program. This 
program includes on-sight inspection of facilities, testing of ingredients for 
gluten content, evaluation of company policies and procedures and on-going 
inspections as well as random sampling and testing of packaged product from the 
retail shelves. You will find the GFCO seal prominently displayed on all Gifts 
of Nature products.

Gifts of Nature Certified Gluten-Free Rolled Oats are an old fashioned style 
oat which means they are a little thicker and require a slightly longer cook 
time when preparing cereal but require no cooking adjustment for other items 
like cookies and meatloaf etc.
