The current issue of Whole Foods Market Fl@vors
(e-mail newsletter) has several items of interest
related to gluten-free diets. The section on
having a dinner guest with special diet needs is
very nicely done. FYI: I put the "subscribe"
link at the end if you are interested in the
newsletter. There is a sample newsletter
available there. NOTE: Scroll down if the item
does not appear at the top of the page.

Special Diets for Special Times With more
attention placed on special needs these days, no
doubt your dinner guest list will include one or
more people with a dietary restriction. Don't
worry, though, it's easier than ever to serve a
meal that will satisfy everyone. There are plenty
of products and recipes available for adjusting
old favorites or cooking up something new and
exciting ... even holiday fair. With a little
planning, special diets can equal special times.

Curried Stuffed Peppers Colorful and savory, this
gluten-free, dairy-free dish brings an impressive
presentation as well as healthful nutrients to
the table. Served atop millet it's a delicious
change from the standard rice accompaniment, and
an occasional sweet surprise of currant gives
perfect balance to the saltiness of turkey
sausage. Works wonderfully with vegetarian
sausage too.

Zesty Quinoa with Broccoli & Cashews
(gluten-free, dairy-free) Quinoa (pronounced
KEEN-wah) is a high-protein, gluten-free ancient
grain that cooks much like rice and has a texture
similar to couscous. Combined with lemon, onion,
wine, cashews and sun-dried tomato, you'll enjoy
this carnival of flavors and textures alongside
seafood, poultry or beef. For a delicious vegan
entrée, add some baked tofu chunks.

Oven Crispy Fish (gluten-free, dairy-free) This
crunchy, gluten-free fish recipe is a tasty,
homemade alternative for frozen fish sticks. Corn
flakes, naturally sweetened with fruit juice,
help brown the fish with less fat, and a tinge of
ginger adds a hint of exotic flavor. If you wish,
prepare ahead by freezing individually cooked and
cooled pieces on a sheet pan until solid. Then
transfer to a freezer storage container to keep
on hand for a quick, heat and serve dinner.

I have no financial interest in Whole Foods
Market. I use their website frequently for
recipes and information. They do a great job
with gluten-free information.
