Thanks so much to all who responded and there were many of you!

Seems this is a problem that mainly affects women. The average weight
gain was 40 lbs and people started noticing it just months after
diagnosis.

The general consensus was:

go on a low fat diet and start counting calories

Many people suggested a high protein, low carb, no sugar diet. No sugar
even includes fructose, maple syrup and honey

Many of you said that gf pastry has twice the calories of store bought
and gf flour is higher in carbs and calories

Metabolizing rice vs. wheat is a lot different. You can speed up your
metabolic rate by eating smaller portions and 4-5 meals a day and
stopping right before you feel completely full.

Lots of people discovered the culprit was rice and corn and by cutting
out these starches finally lost the weight

Many of you agreed with my theory that your body goes into "hoard mode"
after being starved for so long your body will not let go of these
calories. Some people were able to stabilize after some time and others
never did.

Some people mentioned feeling entitled to eating lots of GF products and
bingeing on them in the beginning, not realizing a lot of these foods
are higher in calories.

Someone was going to contact Dr. Kenneth Fine at Baylor and Dr. Joe
Murray for their opinions.

Some people had luck with the Dr. Atkins Diet, the paleolithic diet and
Suzanne Somer's  books: Eat Great and Lose Weight and Get Skinny on
Fabulous Food.  I bought her books and her theory is that proper food
combination is the key to a lifetime of weight control. I am going to to
eat in these food combinations since I've heard of a lot of people
losing that way. She is anti-starch (no white rice, potatoes or corn) so
it will be tough but if I have any luck I will let you all know!
