My brother recently emailed me a recipe for focaccio made with chestnut
flour, but it was really disgusting (I think it came from a Jeff Smith
cookbook).  Does anybody else have any ideas about what to do with chestnut
flour?  The stuff is rather expensive, so I want to put my stash to good
use!
