Hi. I am new to the world of the celiac survivors.  Lucky me.  I have a
question about which foods are acceptable and which are not.  In the
research I've done so far, I've run into disagreeing opinions on the follow:
Spelt, quinoa, buckwheat, tofu and oats.

Will people share with me their experience and knowledge of these foods?
