Okay guys, I leave town soon, so I thought I would summarize now.
I have already gotten 25 + responses.  
 3 were just people asking me to summarize what I found out, but not giving input one way or the other.
2 people said no, alcohol made from any gluten containing grain is not safe.  One felt that technically distilling should leave behind the gluten, but it only takes one molecule to do damage, so why chance it.
Everybody else said that yes it is fine.  Some said that I should make sure the nutritionists has new and updated information as thinking on this has changed about 2 years ago.  Both the Canadian and European chapters allow distilled alcohol's.
I had the distilling process explained to me, showing how and why it is safe.  One from an ex-Navy man (sorry forgot your title, so disrespect by the man) who spent years distilling sea water to drink.  Says that after the process, they had the cleanest, purest water.  Positive on the whiskeys being just as good.
One with DH says that he drinks and occasional glass and does not have flair ups.  Says he will have flair ups if accidentally ingests gluten, so deems them safe!

Several people drink whiskeys and bourbons with no problem.  Most say stick with the good stuff and still check out the process companies use.  IF any of the original "mash" is put back in the beverage after distilling, it would not be gluten free.  Most do not this, and run a greater risk with the cheaper ones doing it.  (Jack Daniels does not do this and say they are safe.)

Some suggestions are to stick with White wine and light rums, and Smirnoff Vodka makes many delicious drinks (1-800-767-3123) including some of the TGI varieties.

Others say Jim Beam, Wild Turkey, Jack Daniels, Highland Park, Woodford Reserve all are fine as they do not add anything back in.

Thank you all for your advice and input.  Since most people said yes, I think I will keep it in my diet as an occasional treat.
