Well, I didn't get the exact recipe for Pamela's espresso chocolate chip
cookies, but did receive lots of great hints and pointers.  The most interesting
recipe had nothing to do with crispy cookies - it is a recipe for black bean
brownies - last item in the summary.  Very interesting recipe, since cocoa and
coffee are both beans also.

cookies but I do have a GF cookbook that I want to
highly recommend. (As a side note, I have many GF
cookbooks but this one really stands out.)  The book
is primarily a desert cookbook and the author was
trained at Le Cordon Bleu and Le Notre Patissier. I
have made several of her recipes and they turned out
wonderful!!!  In fact, I am planning on writing her a
thank you note since her recipes have played a pivotal
role in allowing my 6 year old to feel good about
being celiac.  Just a warning her recipes can contain
lots of butter and cream.

....Rebecca's cookbook has a recipe for Scottish
shortbread cookies and the ingredients seem to follow
Pamela's....

..... Its very easy and surprisingly good.  I know the ingredients are well...
weird.  But I promise that they are pretty good.  My
husband loved them. The brownies from this recipe
turned out like fudgie brownies.  I found the recipe
in a newly published cookbook that I recently
purchased (its not a GF cookbook but most of the
recipes are):

The Daily Bean by Suzanne Caciola White.
The recipe is entitled Big Bad Black Bean Brownies: (I
know its sounds weird but if you like fudgie brownies,
please give it a try....

1/2 cup margarine (I used butter)
2 cups sugar
6 tablespoons cocoa
1 tablespoon instant coffee powder
4 eggs
1 cup pureed black beens (made from 1 15.5-ounce can
black beans, drained and rinsed)
3/4 cup chopped walnuts (optional)
P.S No, I did not forget the flour: there is none

Preheat over to 350 F
Beat together margarine, sugar, cocoa and coffee.  Add
eggs, one at a time, beating between additions.  Beat
in bean puree.  Stir in nuts.  Pour batter into a
9X13-inch greased pan.

Bake for 45 to 50 minutes.

Cool completely and cut into squares.
