Risotto, Italian restaurants' wonderful welcome mat for Celiacs, is the
feature of today's (Oct 25) feature in the Washington Post's Food
section.  Scads of great recipes, most not requring going stir-crazy to
prepare.  (Link, below, says Oct 24, but it was in the Oct 25 paper
edition.)
