Those of you who expressed interest in the 'oat fiber in corn tortilla'
dilemma might be interested in knowing what came of my letter to
Azteca Foods.  I expressed my concern that the addition of oat fiber
to their corn tortillas meant that those persons with gluten
intolerance could no longer buy their product.

I received a letter from Barbara J. Riegler at Azteca Foods,
advising me that they buy their oat fiber from Opta Food Ingredients
(25 Wiggins Avenue, Bedford, MA 01730).  Ms. Riegler included a
letter from Radha Iyengar, Ph.D., director of R&D at Opta. It
read:

        "This letter is to confirm that all Opta Oat Fiber
         products are gluten free.  If you have any questions
         or need additional information, please do not
         hesitate to call me at 617-276-5120."
