I got several requests to summarize, sorry it has taken so long.

 I did not receive any specific info on hotels (except one) - most
recommended renting a villa or taking a cruise
However, 2 people highly recommended ATLANTIS in the Bahamas.

I got a few suggestions for GF dining:
RESTAURANTS:
~ST. MARTIN RESTAURANTS ARE WORLD CLASS AND RESTAURANT STAFF IS
KNOWLEDGEABLE AND ACCOMMODATING
~ST.BARTS IS IDEAL- THEY HAVE A GROCERY STORE IN GUSTAVIA THAT HAS GF COOKIES
AND BREAD AND THE RESTAURANTS  ARE ACCOMMODATING AS WELL

If anyone has any more suggestions or advice about gf caribbean travel or gf
travel in general (as this is our first big gf trip) please let me know!!!
Also, any recommendations for specific hotel chains that may have a branch in
the caribbean would be great as well.
