The replies are still coming in to my question and I am truly grateful to
you all.  Thank you for your good wishes and suggestions.

Before I summarize below, I must say that it is incredible how difficult it
is to deal with a hospital regarding food served to a celiac.  Not only did
I xerox much material and give it to the dietician, I sat with her and
showed her exactly what my husband could eat.  They CONTINUE to send him
bread, meat with gravy, etc.  Somehow information has to be given to
hospitals so that they are familiar with this diet...it's not that hard to
figure out that bread is a no-no!!!
