FYI.  A post today says that Kasha is NOT GLUTEN-FREE.  This is
INCORRECT information.  Kasha is roasted buckwheat kernels. Whole
buckwheat groats are hulled and not roasted.  Buckwheat (all forms)
is gluten-free.  There may be an issue of contamination in some mills
and packaging facilities.

Bob's Red Mill does all kasha and buckwheat products in their
gluten-free mill.  http://www.bobsredmill.com  See also Birkett Mills
products, sold as Pocono and Wolff's brands.  They process only
buckwheat products at the mill.  http://www.thebirkettmills.com  Both
sources have information about buckwheat and recipes, along with mail
order options.

Kasha is one of my favorite foods.  I use it in place of rice, add it
to meat loaf, and any number of things.  It has a nice nutty flavor.
Bob's Red Mill has a wonderful Kasha casserole recipe using sausage,
summer squash, and cheese.  Contrary to the post it is easy to use.
You do not need to coat the whole kernels of kasha or buckwheat
groats with egg.  Egg (or egg substitute) coating is used with the
course, medium, or fine ground kaska to seal the starches and keep
the pieces from sticking together.

Do add buckwheat to your diet.  It is a good source of high quality
protein and other nutrients.
