Attn: Patrick Lenow, Dir. Public Relations

I am following the "string" of messages relative
to your omelette recipe, on the internet,
  with interest.

I am a customer of your Saugus, MA store
I have ordered my share of your omelettes
please note that I am a celiac and are disturbed
that I wasn't informed that they could contain
gluten, in addition to just eggs.

I think that you could simply inform customers
that they can have "simply eggs" and of course
you would have to be careful of contamination.

A slight problem for Ihop...no question; but look
as a case in point The restaurant chain OUTBACK
They have made slight changes in their menu, as
well as simple information from a knowledgeable
staff. Now they have built an enthusiastic following
from the million and a half celiacs in the US
  as well as their families.

The cruise line Norwegian Lines recognising the
large market also has made the small changes
& information for a safe dining experience
