Wow, I got a lot of recipes and suggestions I will post in a few emails over the next couple of days
 - Thanks to you all!

Here they are:

I have given instructions for modifying Bette Hagman's
Dream Pastry (Donna Jo's pie crust) recipe a little

The trick here is to roll it out between 1 sheet of
plastic wrap & 1 sheet of wax paper.  Use the plastic
wrap to flip it into the pan, smooth & remove.
Arlene's recipe was made with butter flavor Crisco,
but lard taste better & has a different combination of
fats (fewer trans fats.)  Since I don't do this twice
a year anyway, I opted for taste.

Egg Pastry

Variation on recipe from a book by Arlene Stetzer…by
Bev Lieven

Mix in food process until the size of small peas:
       1 c. lard, cold (or Butter flavor Crisco)
2 1/ 4 c. oriental white rice flour
   3/4  c. cornstarch
   3/4 tsp. xanthan gum
   1/2 tsp salt
      2 Tbs. sugar
   1/2 tsp. baking powder

Combine & mix well:
      1 well beaten egg
   1/2 c. cold water
      1 tsp. vinegar (cider or balsamic)

Add to dry mixture in food processor, using only
enough to dampen flour and make a consistency for easy
rolling.

Roll between 1 sheet of plastic wrap & 1 sheet of
waxed paper, dusting w/ rice flour.

Leave plastic wrap in place while flipping crust into
pie pan.
Makes a 9" double crust.
For a pie shell, poke surface all over w/ fork & bake
at 400 degrees until brown.
