I have no commercial interest in the new edition of The Joy of Cooking, but
as a long-time member of this List, I do want you all to know that there is a
section on gluten-free baking.  I was asked to test and edit this section and
contributed some recipes (I am a professional baker and food consultant).  As
the mother of a celiac, I was thrilled that the editors wanted to include
gluten-free baking, since this is one of the best selling books of all time.
The original text needed very substantial work to make it accurate and I had
to do the necessary work in a very short period of time. However, the editors
were very receptive and eager to make this section accurate, helpful and
delicious.  So Happy Thanksgiving, and I hope you enjoy my pie crust, scones
and the other recipes.
