I copied/pasted relevant parts of emails I received regarding all inclusives for Celiacs ie Mexico and other suggestions.  Below are helpful emails responses I received.

Go on a cruise!  We are going on our 11th Dec 7th on Celebrity 

out of Ft Lauderdale to the islands around St Thomas.  They accommodate

 

 

 

I would suggest you consider a gluten free Bed and Breakfast in San Antonio,
Tx.  You will get a big gf breakfast, plus there are lots of good celiac
friendly places to dine.  There is a lot of history and many other things to
see in San Antonio and the surrounding area.  Some of this can be seen at

I am going to an all inclusive in the Dominican Republic in Oct.  I figure as long as they have grilled meats, fresh steamed veggies, baked potatoes, and fruit I can survive just fine.  It might be a bit more difficult with children.  I am taking some of my own waffles for breakfasts and a bag of cereal in the event nothing is o.k.

 

 

 

We did an all inclusive at the Fiesta American with three of us Celiac. The food was good and mostly buffet and lots and lots of choices.  Mexican food uses very little wheat and we had plenty to eat.  When we did eat in a restaurnat there was lots of fish and steak and we just seemed to manage with no difficult.  None of us got sick and we had a great time and felt it was a great deal.  We did the one in Cozumel.  We also did a Beaches Resort in the Carivbean and it was fabulolus and no problems. 

 

 

 

I am a resident in Mexico with Celiac since about 6 month.
I would say that generally Mexican food is pretty much GF, as one of the 
main ingredient is Corn, used in Tortillas, tortilla chips, etc. Also 
they mostly use fresh ingredients to prepare meals, and tend to make 
simple dish with meat, poultry or fish. The sauces involve fresh 
tomatoes, green or red, with herbs and of course chile. (Hot peppers). 
All this is pretty safe and should not cost you too much problem to eat 
well in most restaurants.

In regards of all-inclusives I am sorry to say that my experience is 
limited. I wonder if they would give you a special menu, or even enough 
choices so that you can have a safe meal. I know that this would not be 
a problem in any resort were you can easily get grilled steak with rice 
and beans, and some tortillas.




I and my 8 year old son have celiac.  We have been to Mexico three
times, two of them at an all inclusive.  We had a fabulous time.  I
always go with my restaurant card in Spanish.  I meet with the hostess
on our fist day and they always took me right to the chef.  The chef
came out at every meal and walked down the line and told us what we
could eat and what we could not eat.  We have stayed at a 5 star and a 4
star.  The 5 star had a larger food choice and many options for us.  The
4 star had a smaller food line and fewer choices.  The 5 star was more
accommodating and offered us a gf version of the dessert for the night.
The 4 star did make me a special meal one night.

They were very accommodating and helpful.  I did get sick two times, but
I think it was from the eggs.  Once I stayed away from the eggs I was
fine.

I love Mexico and it is very easy to eat in Mexico.  The hotels try to
have more American food, but if you venture out the Mexican restaurants
all have corn as their staple food.
