Hi everyone.

As I am new to this system, I hope that this summary is helpful,
especially to those that requested it. If you would like more detailed
e-mail responses, you can e-mail me until the 15th.  Thank you all for
your contributions, if it didn!|t help me, it certainly has helped others!
Additionally, I was particularly wondering about glatt kosher deli meats
and their repective brands, if anyone knows!K.

Out of 40 responses, I received the following information:

Gluten can be found in:

Fillers or binders (serves to enhance water retention, have the meat
hold it's shape as well as a protein booster, and texturizer.)!
i.e. "wheat," "modified food starch," "texturized vegetable protein,"
"hydrolyzed vegetable protein," "starch," as well as "caramel color".
Even the "home cooked" brand must be checked out. Can also
contain casein.

Soy protein  - 1
Corn syrup - 1
Grain vinegar used in the processing - 1

In any additives - 16
i.e. MSG (if manufactured in the US it is safe if not you have to check);
broth; flavor enhancers; natural flavors; spices, seasonings, BBQ,
hickory, smoke, soy sauce, bastings, maltodextrins, etc.

I was told that meats have the ingredients labeled right on the front
and you can even ask to see the label at the deli counter.

Potential cross contamination with meat slicers at deli - 7
At the deli, sandwiches can be made in the same area as the meat - 3
There is no gluten in meat - 1

Many of you stressed that it is very hard to tell with many of these
additives whether they are safe without calling the company. One
person suggested that when calling, it is good to guarantee that the
source of those items remains constant.
