I for one vote for hand mixing over a bread machine.
If you are going to invest in kitchen equipment, a
heavy duty mixer like a KitchenAide is going to be
a much more useful tool than a bread maker. Note,
I have a Welbilt Breadmachine and used to use it quite
often, but now I mix my breads in the KitchenAide and
pop them in the oven. My reasons:

1. It is really no harder than the bread machine.
2. GF breads only need to rise once, so you can cut
down on the overall time required and often my
bread did not rise as well the second time in the
    bread machine.
3. In a loaf pan, I have a nice rectangular shaped
loaf which is easier to cut and makes an easier
to eat and pack sandwich than the round loaf I
got out of the bread machine. (Also no hole in
the bottom where the paddle comes out).
4. The crust I get is much more desirable than the
thick hard crust I get in the bread machine. My
loaf cooks more evenly, and I never have a soggy
middle. I have a couple of stoneware pans that
I like to use, but regular loaf pans work well too.
5. It's easy to make a few rolls at the same time.
I mix up the recipe for a single loaf, pour most
of it in the loaf pan, and use the rest in over-
sized muffin pans to make rolls. If you melt
some butter in the bottom of the pans and add
some brown sugar, cinamin, raisins, and nuts,
then top with the bread dough, you can get great
    sweet rolls.
