I am writing to ask if anyone can recommend an organic brand of GF cheese. 

I was told recently by a dietitian that cheeses can be made with animal, vegetable, or microbial rennet and that she could not recommend a GF cheese product because companies do not have to state the source of the "enzyme preparation" on the package label. She stated that many cheeses, such as mozzarella and Swiss, are manufactured using barley as the enzyme source. 

After her comment, I contacted several companies (including those specializing in organic products), and to my surprise, none of them would guarantee that their cheeses were gluten free after I broached the topic of enzymes.

I haven't come across a good discussion of cheese enzymes and would be interested in comments and suggestions.
