The new R5 Elisa test kit detects to 5 ppm gluten which is 2.5 ppm
gliadin. This is the most highly sensitive test for gluten and the Codex
Alimentarius has validated the test in a number of centers around the world.

Companies and groups are using various kits to detect at levels between
5-20 ppm gluten. For example the GFCO and University of Nebraska Food
Allergy Program uses the 10 ppm test kits along with a number of
others companies in the industry. Health Canada is using a 20 ppm test kit but is
looking into the R5 kit. The Gluten-Free Certification Organization  (GFCO) by the
