Measuring flour should be done by weights. Get a Ounce scale and weigh all
the flours that you are using you will find that you will get a more
consistent product and if you don't like the bread you bake. It is easier to
add and subtract the flours you don't like and replace it with what you do
like. Professional Bakers weigh everything including the water, egg,salt ect.
