My questions are:  Are basic picnic hams gluten free? and What type of hams
tend to contain gluten?

1)one person suggested that animals that feed on grain are contaminated.

2) two people said that hams that are shot full of water with flavoring have
a high chance of containing gluten. Avoid any product with a label listing
water as a ingredient.

3) Stay away from the more processed type hams.  Stick with natural hams.

4) Don't purchase a ham that comes with a glaze.

5) two people mentioned that I should purchase a CSA/USA Cooperative Gluten
free product Listing ($8.00)book. Lists ingredients that make up certain
products.

6)it was mentioned that "secondary ingredients are not required to be listed
on labels."

7) a few mentioned that in the USA Cook's brand and Hormel Cure 81 were GF.

8) Probably the most helpful to me, a person who has their own "salaison" in
Quebec, Canada and who makes their own smoked meat, roast beef and Hardies
says " we make smoked meat and roast beef and Hardies.  Suspicious
ingredients are dextrose and nitrite. Carmel in the brine could have malt in
it.  Best thing to do is ask the company that made the ham.  He looked up
some addresses for me and I will contact the company.  Meanwhile the ham
sits in the freezer until I am sure.
