Here is the summary to my question about enzymes?  Thank you to everyone that answered.

I take enzymes from Natural Choice Products. You can find the at
www.1inhealth.com

Take Bean-zyme. Beano has wheat.  Order it online.

An enzyme is a protein. The definition is: a type of protein made by the cell in order to encourage or regulate particular biochemical reactions

Some enzymes cleave carbohydrates. Human saliva contains an enzyme called amylase that helps starch turn starch into a sugar for digestion. Amalyse is a carbohydrate enzyme. Amylose is a starch found in lots of carbohydrates, such as rice. The amalyse enzyme breaks down amylose into sugars. 

As for whether you should take enzymes as a supplement is not something I have any knowledge of. But at least you have a definition to work from.

I am using EnZym-Complete by Kirkman. It isn't specifically for the gas, etc. I'm having trouble gaining weight on my VERY specific diet and the proteins I eat are being used up because the carbs aren't being completely broken down because of my lack of enzymes. It does make sense but I don't know if they would also help with gas, etc. I don't really have that problem.  I order them online from www.kirkmangroup.com

 don't know for certain if the product I use is gluten free (my son is the celiac), but the ingredients look ok at a glance.  It also says that it contains no starch.  Anyway, it's called OmnigestEZ and I buy it at Walmart on the shelf beside the Beano.  It contains 7 different enzymes to deal with lactose, proteins, fats and carbs.  I take it swhen some mystery something I've eaten is making me gassy.  It really helps.  There's no phone number on the box , but they do give a website for more info: www.sunsource.com.
