=========================    Hidden Gluten
 
Whenever a product or ingredient is identified as a possible source of
gluten-contamination it will be highlighted in this section.  Some
products contain a minute amount of gluten and may not have a
noticeable physical affect, but may cause internal damage.  NO GLUTEN
is the ActionLine's goal.  Medical research has established one standard
for damage to the gut, but it is still unknown how much gluten or if
repeated exposure to small amounts of gluten will increase a celiacs'
chance of certain cancers or cause subtle changes, such as lassitude
and depression.
 
Nebulous terms must be researched until a satisfactory answer is obtained
that the item is free of any toxic protein.  When those terms are found on
a label, we must routinely verify that it has not changed.  If adequate
information is obtained and fellow celiacs do not report any adverse
reactions, those products should not be left out of your diet.  Some
celiacs limit labels with nebulous terms to only a few products, in order
to reduce the amount of time spent on routine verification.  When in doubt
leave it out, is the best course of action.
 
Gluten can be added to a product as an ingredient, through cross
contamination, or as a result of the manufacturing process.  When all
gluten is kept out of a celiac's diet, the best quality of life is enjoyed.
Each person must determine their preferred life style and how careful they
will be in avoiding hidden toxic proteins.
 
1.  TCBY: In a letter dated Nov. 10, 1995, Stacy Duckett, VP Corporate
Communications reported that we have determined that we cannot provide
reliable information that any of our yogurt flavors are always gluten-free.
While there are some that at any moment may be, a supplier may make
substitutions from time-to-time that may include ingredients containing
a grain derivative.
 
2.  Louis Rich has removed (Sept. 95) these items from their GF list:
Turkey Bacon, Turkey Luncheon Loaf, Turkey, Summer Sausage, and Smoked
Chicken Breast. (18)
 
3.  Oscar Myers has removed (Sept. 95) these items from their
GF list: Brauchweiger Liver Sausage, German Style, Chicken Breast, Oven
Roasted & Sliced, Cheese Hot Dogs, Cheese Smokies, Beef Smokies, Sausage
Smokies. (19)
 
4.  Boston Market turkey and ham are reported by the company to have
gluten in the basting. Some locations use a new chicken recipe that
is not GF.  For details contact the Customer Serive Team at (800) 365-7000.
 
5.  Oat Fiber is a new ingredient that is being added to many corn
tortillas. Several brands are adding Listed it on the package.  Since
multiple brands are involved, all brands should be questioned and verified.
 
6.  Eating Out:  There are many techniques for reducing risks when
attempting to remain GF, here is another one.  Instead of asking that the
grill be cleaned before your meal is prepared.  Just ask that the steak,
chicken, etc. be cooked on a piece of aluminum foil be placed between the
grill and the food.
