Hi everyone
 
Since posting the USDA interview on allergen labeling some people have sent messages that they thought all protein sources had to be declared on labels of USDA regulated foods. Just to clarify all protein sources do have to be declared on USDA labels but only by their common or usual name. Common or usual names include "malt" "modified food starch" and "dextrin." In other words the protein source "malt" has to be declared but the ingredients list does not have to state the starting grain "barley." The protein source "modified food starch" has to be declared but the ingredients list does not have to state the starting grain "modified food starch from corn" or "modified food starch from wheat." Hopefully all of this makes sense as it can be very confusing.
