Hi Friends,
        Thank you all for you many responses!  As some of you wanted to
know the difference (and I can't remember who you are) I am posting this to
the list.
 
The general consensus is:
 
Potato Starch and Potato Starch Flour are one in the same.  They are the
starch only of the potato, and therefor add no flavor to any item the are
baked into.
 
However, Potato Flour is the whole potato processed into a flour, and it
will add flavor and heaviness to anything it is added to.
 
I was also told that the same holds true for the cornstarch and cornflour.
 
Incidently, I found some potato starch this weekend, and noticed that if
you give the bag a little squeeze it feels and sounds just the same as
squeezing a box of cornstarch!  (Potato flour does not give the same effect
at all as it is grainy in texture)
