BLACKBERRY BREAKFAST BARS
 
Filling:

16 oz. frozen blackberries orraspberries
4 Tbsp sugar or more to taste
2 Tbsp water
2 Tbsp lemon juice
3/4 tsp. cinnamon
 
 
Topping:
1 cup quick-cooking rolled oats
1 cup gf flour
2/3 cup packed brown sugar
1/2 tsp. cinnamon
1/4 xanthan gum
1/4 tsp baking soda
1/2 cup melted butter
 
 
Bring filling to a boil, reduce heatand simmer, uncovered, until slightly thickened, stirring frequently.  Cool.
 
Preheat oven to 350.  In a mixing bowl stir together dry toppingingredients.  Pour melted butter over topand combine.  Set aside 1 cup of thetopping.  Press remaining mixture into anungreased 9x9 pan.  Bake 20 – 25 minutesuntil lightly browned.
 
Remove from oven and carefully spreadfilling on top of baked crust.  Sprinklewith reserved topping and lightly press mixture into filling and bake for anadditional 20 – 25 minutes or until topping is set.  Cool in pan and cut into bars.

Freezes well
