I originally posted because I note that some celiacs seem to not improve, or even develop new symptoms when they go gluten free.  It only seems natural to think when you quit a toxic food, that you will get better.  It worked for me, but I didn't do something that I'll bet a lot of newly dxed celiacs do:  I didn't add anything new to my diet.   If you take out something bad, but you add in some new thing(s) that your body has never had to deal with before, maybe THAT is the source of continuing or increasing problems.  The things I would be suspicious of are guar and xanthan gums.  My post had to do with Dr. D'Adamo's claim that these gums can increase food sensitivities.  I got only one reaction to this, that D'Adamo's claims are unfounded.  Well, I have problems with his books, but suspect there is something to it, there really are lectins in the world, and many are toxic.  Wheat has some toxic lectins in it.... only by the time you are done with his books it becomes evident that he's telling nearly everyone that wheat could be bad for them.  Sounds a lot like me in my campaign to make the world aware of the dangers of wheat, and I've made a lot of people feel better.  I have to wonder if his advice to avoid some major food allergens is why his diet gets such good results.  

I had 13 people tell me that guar gum is laxative for many people.  Two said I could be reacting to lime in corn tortillas, which I doubt as I take Ca carbonate with no problems.   One thanked me, saying in the 3 wks since diagnosis, she'd jumped on the gluten free baking bandwagon with both feet, and her guts were a disaster.  She quit the GF baked goods, and started feeling better in 12 hours.  THAT'S the sort of thing I was getting at.    Donna
