I saw changes in 2 days after having the disease for 12 to 15 years.  Since
you haven't seen ny response I would suggest that you have either been
misdiagnosed or that there is still some unsuspected gluten in your diet.
Also in rare cases celiac patients are sometimes given cortisone to aid in
the recover.

Did you have a biopsy?  It is the only positive test currently available for
celiac sprue.
