Dear listmates:

Here are the 5 answers that I recieved of my e-mail which is going
below again:

I do not know this work, but I do know that both corn and rice are
difficult for me to digest and I eat no corn products of any kind and
very, very limited quantities of brown rice. I find I cannot tolerate
buckwheat or quinoa either. Because I am a Celiac who is also a vegan
(no animal products of any kind), and am also unable to tolerate soy,
yeast, nuts, seeds, and most fruits, my diet is so limited as to be
quite difficult, which accounts for my consumption of brown rice on
occasion. However, I do believe that most grains unhealthy if eaten in
large quantity. I will look up the work you have mentioned.

Carlos,

The first link to the basics explains why grains can be bad for us,
particularly if they are not cooked.

Good question for the listserv.

Those are great links, thanks! I've been a "follower" of Nourishing
Traditions, which brings up many of the dangers of grains.
Some of those dangers can be mitigaged by soaking and
fermenting grains, but in general I tend to think they
are very problematic foods. This HAS been researched a LOT --
why in the world we have that food pyramid is beyond me.

Humans do best on a meat and vegie diet. However, those
are very low profit-margin foods. Most grocery stores don't
make money off their produce sections, they lose money.
They make money from packaged processed foods that
store well, so that is what they advertise. But NONE of
the packaged foods are good for you -- the fats are horrid
(trans fats and rancid fats) and there are few nutrients,
and they are horribly expensive to boot. I get so sad
when I see people on food stamps buying packaged foods --
a big sack of carrots is $6 and potatoes are darn cheap.

So hey, you are in Argentina? With good beef? Dig into
a nice rare grass-fed steak with a side of good vegies
and maybe some kimchi or raw kraut ... your gut
will heal.

Since being diagnosed w/cd a bit over a year ago, I have struggled to find the right diet for my body . . . I'm finding that I feel best (except for being hungry constantly) without corn, rice, dairy, soy, peanuts, even potatoes . . . I found the info extremely interesting. Thanks, Peggy

Thanks for the wonderful research. Very interesting! This actually makes a
lot of sense pertaining to my own personal situation. This also reveals how
celiac disease research has only scratched the surface...we have a long way
to go. Susanne

Many, many thanks to all for these kindly anwers.

Dear listmates:

I know that the Plant Kingdom Tree is very informative about
triticae kind is the dangerous for the celiacs but,

Does anyone know the research of Dr. Kasarda:
http://wheat.pw.usda.gov/ggpages/topics/Celiac.vs.grains.html and
http://wheat.pw.usda.gov/ggpages/topics/celiac.html

Does anyone know the research of Dr. Cordain:
http://www.beyondveg.com/cordain-l/grains-leg/grains-legumes-1a.shtml#intro

Does anyone know the research of Dr. Byrnes:
http://www.powerhealth.net/selected_articles.htm

Does anyone know the book of Dra. Gottschall: Breaking the Viciuou Cycle

Does anyone know the book of Dr. Sydney Valentine Haas: "Management of Celic Disease"
1951, and his research of thousands of celiac cases.

Five differents doctors, and are more like Dr. Mercola, that are saying that corn and
rice are dangerous not only for the celiacs.

This question is very hard for the forum but,: what do you think about this
situation ???

Are there a lot of doctors researching in the proteins of the grains in very,
very urgent maner for the health of our damaged celiac guts ???

I know only one work in this way:
Anderson CM, French JM et al: Coeliac disease: gastrointestinal studies and
the effect of dietary wheat flour. Lancet 1:836-842, 1952
This was the born of the gliadin free diet until today. Only ten childs
researched. Only ten. But Dr. Haas´s research had thousands of cases.

Many thanks for your time in write me. I will summary again.

Saludos from Argentina.
