There was a recent post cautioning about balsamic vinegar adulterated
with caramel color (which is usually derived from corn, but that's
another matter). I just took an informal poll by looking at every
bottle of the roughly 20 brands at my local Whole Foods. Not a one of
them contains anything other than vinegar produced from grapes. No
coloring, no flavoring, no preservatives, nothing. However, because
it is a fermented grape product, it does contain sulfites produced as
a natural part of the fermentation process. Some people react to
sulfites. This is not a gluten reaction, and doesn't mean the vinegar
is in any way unsafe for people with celiac. By all means read the
labels, and avoid anything that seems iffy to you. Just remember that
not all reactions to foods are gluten reactions.
