I just received this mail from the folks that make Tabasco sauce.

McIlhenny Company uses National Vinegar Company of Houston Texas. They
assure us that their product is free of gluten. Grain alcohol is the
main ingredient used in the manufacture of vinegar. Gluten and other
proteins are removed during the alcohol fermentation process. If you
would e-mail me your mailing address I will send you a copy of
information so that you may show it to your physician to make absolutely
sure that our products are safe to be consumed by those allergic to
gluten. Thanks.
