Posana Cafe awarded Gluten-Free Food Service Accreditation
 
Best Practices for gluten-free food service are used by this Asheville NC  
restaurant.
 
(Seattle, Wash., April 30, 2010) - Posana Cafe earned an excellent  rating 
for their commitment to Best Practices in safe gluten-free food service  
through the Gluten Intolerance Group of North America's (GIG) Gluten-Free Food  
Service Accreditation (GFFS) program.
 
The GFFS program establishes best practices for gluten-free food service,  
through the establishment of policies, procedures and practices that promote 
 control measures that assure an establishment is able consistently to 
produce  gluten-free meals. This program requires that an establishment document 
and  demonstrate use of practices from purchasing to serving GF meals. 
Establishments  undergo an onsite scored audit process and are evaluated in the 
following  critical areas: identification of GF status of ingredients, 
recipes, and  finished products; and handling of raw materials and foods to 
prevent  contamination; training of staff; quality control. GFFS hires food 
service  auditors with years of experience in food safety and food production to 
conduct  the audits.
 
Posana Cafe is a dedicated GF restaurant making all its products from  
scratch using local commodities. All GF baked goods are made from their own  
recipes. Posana Cafe does not openly advertise that everything on their menu is 
 GF. They want to reach beyond those needing a GF diet to a large audience, 
 showing that GF can be spectacular in taste and presentation. They spend a 
lot  of time with their customers choosing to "fill more than a person's 
stomach",  says Peter Pollay, owner. Being a gluten-free restaurant was 
Peter's idea, when  he and his wife decided to open Posana Cafe, as a way to 
support his wife's  dietary need.
 
GIG is a national non-profit providing support to persons with intolerances 
 to gluten, in order to live healthier lives. "Working with restaurants to  
establish a best practice is important to win GF customers", says Channon 
Quinn,  Director of Industry Programs with GIG. "Persons following a GF diet 
are uneasy  dining away from home, afraid of getting sick from food they 
can't see being  produced. Our goal is to assist food services in being able to 
produce safe GF  food and gain customer loyalty."
