Hello again

I'm reposting my recipe for a white light bread.

1) add 14 grams (1/2 oz) of fresh yeast (1/3 packet dry yeast)
   and  1 teaspoon of sugar to a glass, mix well, let melt ...

2) meanwhile
   add 500 ml (2 cups) of white rice flour,
       125 ml (1/2 cup) of corn flour,
       125 ml (1/2 cup) of potato starch,
        62 ml (1/4 cup) of tapioca flour
         2 teaspoons of Locust bean flour (Johannisbrotkern-Mehl)
         2 teaspoons of salt
   and mix all ingredients well, then butter and dust a suiting form
   with the flour mix.

3) add 400 ml (almost 2 cups) of water and
         2 tablespoons of (olive) oil and
         1 tablespoon of (apple) vinegar
   to the melted yeast, mix well

4) Mix dry and wet ingredients well to form a nice dough and
   pour/push into the form, let rise for 45-60 minutes in the
   oven that has been preheated to 100F (38C)

5) bake at 400F (200C) for 60 minutes.

Troubleshooting:

If the dough does not rise well, give it more time.
If the dough rises too quickly, the dough is too wet.
If the dough rises nicely and sinks back while baking...too much yeast

Experimentation:

As all ingredients may vary, you'll have to experiment a little in
order to obtain optimum results.

Source of ingredients:

Grocery- or asian food stores, they also might have various mixes
of similarly suited flours..
