If youšve been yearning for pizzeria-style, gluten-free pizza . . . youšre
wait is over! Matteošs Pizzeria in Cool Springs is now offering a
gluten-free (GF) pizza. Peter Spellman, owner/operator, learned about GF
pizza last year at a pizza conference and decided he would like to offer his
customers in Middle Tennessee a healthy pizza option, just like pizzeriašs
in Chicago and Scottsdale AZ. He has spent the past year researching GF
baking and experimenting with GF flours to develop the perfect crust.

Spellman is well aware of cross-contamination risks, especially that flour
dust floats in the air for 24 hours. He mixes his last gluten pizza dough on
Fridays, thoroughly cleans his kitchen, then mixes up the GF pizza dough on
Sundays with a dedicated mixer, bowls, utensils and pans. He fully cooks the
pizzas, flash freezes and stores in the freezer. The equipment is stored in
covered boxes during the week.

Matteošs is a family-owned, independent, local business that uses high-end
ingredients, including Tom Sawyer GF flour and cheese that is 100% dairy.
Spellman has future plans to build a wall and add a vent to contain the
flour dust from his main mixer in the back of the store, while creating a
gluten-free prep zone at the front of the kitchen.

Prebaked GF shells and pizzas are available in 8- and 10-inch thin crust, as
well as 6-inch personal-pan style thick crust. The pizzas can be quickly
reheated in your home oven. Matteošs offers carry-out and delivery to parts
of Brentwood and Franklin. Since Spellman only makes GF pizzas on Sunday to
last through the week, pre-order by Saturday if you want to guarantee GF
pizza will be available. There is limited seating.

Spellman is community focused and hopes to be a responsible provider of GF
products. He would appreciate your input and feedback.

I personally sampled a 10-inch cheese pizza and it was delicious! The crust
was light and flaky and didnšt harden when it cooled down.
