Several people responded that it's not necessary to knead GF dough because
this is supposed to develop gluten (which is absent in GF flour). What I
actually meant was being able to shape the dough by hand (for rolls and
things like that). And I would like to make a pizza shell I could actually
throw into the air like they do in Italy :-).
