Re: my originial posting of the letter from Mission Foods, about their corn tortillas, stating that they were gf, with no cross-contamination issues.

I received the following message from a fellow listmate and feel it worthy of passing on. While I don't necessarily believe every food factory can be painted with the same brush, I was reminded of personal experience years ago in my youth working in a large food factory, as well as my extreme gluten sensitivity. Each one can make his own call.

The inside of those plants are almost always coated in a dusting of flour, it is everywhere, all over plant equipment, product lines, you name it, it is there.
 

I don't think it is possible to make a truly GF corn tortilla or tortilla chip after having worked in one of those plants & seeing what goes on in the food manufacture. I worked in that plant as a janitor & maintenance man btw. A lot of times I had to clean machines off before working on them & I saw layer upon layer of flour encrusted to machinery used on both lines: flour & corn product. Tortilla chips are made on these same lines under the same conditions. They get pressed out on these same lines & dropped in to a vat of hot oil that is exposed to the same flour conditions & often times had a flour product being run through it.
