First of all thank you thank you to all those who responded, what an awesome resource!
I've included all the unique responses.  The most overwhelming repeat was for the Irish Tea room, in Niagara on the lake.
I hope to include our experience for you all when we return in June.

Niagara Falls, ON
Swiss Chalet is ok except the fries.
The casino buffet is great, they will walk you around and find you something to eat. If you don't find anything you like they will make it.
Boston Pizza has a gf pizza.

Niagara on the Lake
A must is the Irish Tea Room 75 Queen St. it is in the Irish Design Store right on the main street beside the theatre.
The food is so good and the dessert are all gf.

a grocery store in Niagara Falls on Morrison St. & Dorchester Road called Foodland have an excellent section of stricly gluten free products, upon entering the store turn left, first aisle on your right it's there.   Also, if you want frozen products, ie bread, rolls, etc., before going down the aisle that's "gluten free", go straight back where the ice-cream is, immediately on your left, is the gluten frozen foods. Now you mentioned going to beautiful Niagara-on-the-Lake, you'll love that place, there's a restaurant called the Irish Tea Room, almost everything is g/f, & desserts to die for, g/f of course.

Niagara on the Lake has a lovely Irish cafe. I was there about 5 years ago and they had many gluten-free dishes. We had quiche and pizza, and something baked and delicious for dessert. It was on the main street, near the park. But it was small, so if you could get away with just a few people, it might work.
I went to Niagara this past New Years and I have to say - the food was part of the highlights of the trip for me! The falls were great, but really excellent gluten free food at Italian restaurants was a treat. You absolutely must go to: http://www.zappispizza.com/ and http://johnnyroccos.com/

I would drive the 9+ hours back just to go to either place!! ;)
