I really missed hot cocoa when I had to give up milk (including soy).  I've 
been trying for over a year to make a GOOD cup of hot cocoa w/o milk.  I 
finally did it.  The gelatin is the key ingredient lending the smooth, 
slighty vicous consistency that the milk normally gives it.  W/o gelatin, 
it's thin & watery and the cocoa settles down to the bottom too quickly.

GFCD Hot cocoa (one cup)

While you heat the water, thoroughly mix the following dry ingredients in a 
coffee mug:

1 heaping teaspoon regular, unsweetened Hershey's cocoa (not special dark, 
Dutch style)
1 heaping teaspoon sugar*
1 packet Splenda*
a few grains of salt (a tiny, tiny pinch)
1 packet Knox unflavored gelatin

Pour boiling water into cup.  Stir well.  Add 1 drop vanilla extract, a tiny 
pinch cinnamon or marshmellows as desired.

*You can use 2 teaspoons sugar or 2 packets Splenda.  I like it best with 
one of each.
