BREAKFAST BARS

16 oz. frozen blackberries/raspberries 
4 Tbsp sugar
2 Tbsp water
2 Tbsp.  lemon juice
3/4 tsp. cinnamon

Topping:
1 quick-cooking rolled oats (I use McCann's)
1 cup gf flour
2/3 cup brown sugar
1/2 tsp cinnamon
1/4 t tsp. xanthan gum
1/4 tsp. baking soda
1/2 cup melted butter

Bring filling to a boil; reduce heat a simmer, uncovered, until slight 
thickened, stirring frequently.  Cool

Preheat oven to 350.  In a mixing bowl stir together dry topping 
ingredients.  Pour melted butter over top and combine.  Set aside 1 cup of the 
topping.  Press remaining mixture into an ungreased 9x9 pan.  Bake 20 - 25 minutes 
until lightly browned.

Remove from oven and carefully spread filling on top of baked crust.  
Sprinkle with reserved topping and lightly press mixture onto filling and bake 
for an additional 20 - 25 minutes or until topping is set and lightly browned. 
 Cool in pan and cut into bars

This freezes really well.

Note:  I have also used 20+  oz. of frozen peaches and cooked it a little 
longer and it's great.
