Thanks to everyone that sent a reply...it sounds like I'm not the only one
that has been in search of a good nutritional analysis database.

Here's what I learned:

Calorie Count <http://caloriecount.about.com/> does have nutritional data
for many, many gluten-free foods.  You can also create recipes here.  It
provides a relatively simple analysis that includes major vitamins and
minerals.

Diet Power <http://www.dietpower.com/> was also suggested by someone that
used it a long time ago.  I didn't try it out because there's a monthly
fee.
